One year ago Lori and I visited Hauck Cellars, just off the square in Healdsburg. You can read the Forum post here. I commented that we really liked their 2006 Meritage, a Merlot-based blend. Great tasting room, with positive energy from the husband and wife team of Greg and Jennifer Hauck.
Well, we pulled out one of those bottles last night. We did a simple job on the tri tip: salt/pepper and a quick sear on each side, then into the oven for 45 minutes to roast with some onions. Slice it thin, then onto a sandwich of fresh sourdough (Semifreddi's sourdough batard, maybe the best sourdough in the Bay Area), homemade pesto (with jalapeno) and carmelized onions. Great sandwich, and paired with the Hauck Meritage it made for a great dinner. Really enjoyed the different flavors that the wine added to mix, complementing the beef, spice and sour of the sandwich with some nice fruit and acid.
We're going to have to drop in on Hauck Cellars soon and pick up a few more bottles!
